I wouldn't bother with the upper rack as it's not very deep, I bought the front shelf and mounted it internally as mentioned above

Wood chip alternative

Probably a stupid question but here goes, I usually use wood chips when I'm grilling on the weber but I've ran out, I also own a pellet smoker, can I use the some pellets in a smoker box? At the end of the day it's still wood right?

Hmm, not the easiest, if it was pork shoulder instead of the chickens you would have been laughing but here is what I would do.....

Do the ribs smoke stage and foil stage but pull them off before done and wrap in towels and cool box them to keep warm, give your chickens a blast at the higher temp ...

I'm using the smoker for my dad's bday and although I'm good with my timings for pulled pork and ribs i need to cook a combination of food all to be ready at the same time, I need to cook a couple of whole chickens, a few racks of ribs and a butterflied piece of lamb. Did the brisket turn out OK Dave? I've only ever done flat before too and would like to try some brisket with a point. I've always found mine a little dry.

I was really pleased with how it turned out, the flat was really tasty and tender not as juicy as ive seen them on youtube ...

Yeah I agree they are on the pricey side but haven't found any butcher near me yet that can do a whole brisket, i can get large pieces of flat from Costco but wanted to try the whole thing, as for the butt I can get really nice shoulders from my local butchers so I'm not to worried about using elsco ...
