Smoked Pork Shoulder Steaks on the UDS
Had this in my head for ages and finally got round to having a go on Saturday. Turned out really delicious. Here's the story:
First of all, though, meet my drum smoker. I based it on the Big Poppa style then it kinda went its own way. Really happy with it.

Indoor UDS
Hey folks,
I've turned half of my garage into a brewery and currently have my UDS sitting in there. I like it where it is and would like to keep it there permanently. The main reason is that I don't want it getting destroyed in the garden and I can happily smoke in rainy/windy weather without a ...

UDS Fire Basket - Is this suitable?
Hello folks,
I'm finally ditching my trusty trash can smoker and building a UDS.
Have sourced this perforated sheet metal from Wickes.

Is it any good for a fire basket? Will mount it onto a 14" grate.
6mm - 3.5mm grille spaces. Should be OK I'm thinking?
Also - it states that it's 'raw ...

Re: Smoker Build - Trash Can Smoker
I think it's a fantastic build, inventive and well put together. The debate on galvanised or not will go on but it doesn't matter, I am sure if floyd gets sick he will tell us and we will then know. Meanwhile, we should applaud the creators of inventive BBQs.

have you tried a ring of fire method ? I reckon stacking briquettes 2 high round the outside, with every second one having an extra 2 facing inwards should give a decent burn.....
Worth testing ?
Sounds good. Are there any vids or diagrams?
