I like your rub. I do a very similar one myself. I find a little goes a very long way, so I use it more to season than to flavour the meat prior to getting it in the pit.

Hi. I have a New Braunfels Hondo...bought about 3 weeks ago. A slightly different model to yours but essentially very similar.
Have noticed the door isn't flush to the side of the firebox but hadn't thought about mods as yet.
I'll keep it in mind but giving the pit a run on the weekend to test ...

I think I'm looking for the larger pieces as I don't want to be burning tons of charcoal or briquettes and use wood for the heat and smoke so long as the wood is well seasoned. has anyone used Wildwoods charcoal crom the Coppice Association?
