Kelvin and I had a terrific time. Thanks to Toby and team for a very informative relaxed class in a great setting. What fantastic weather we had! Claire, nice to have these photos.

We tried sand and foil (similar method) on our ProQ Frontier but it was running way too hot so we went back to water. We only use sand for hotter cooks like poultry.

Thanks Adie and LM. No, we didn't use the 3-2-1 method. We dry rubbed them, smoked for 4 hours (flipping them once) and sauced them with a further 20 minutes cook after that. Grate temp about 200F but I increased to 250F after saucing.

Hello there--we used Big K Lump charcoal on our cook today and it was terrific. We bought it at a local independent garden centre.

First Ribs

Hello Forum

Kelvin and I cooked our first ribs today -- very nice too. Now we've had our first go at all the main things: chicken, brisket, pulled pork and ribs. We're having a great time.

First Pulled Pork

Kelvin's birthday today so we did our first pulled pork and it was goooooood. It was a small rolled shoulder from Waitrose meat counter...unrolled it and applied rub and re-rolled it. We've just got ribs to do and then we've tried all the main things.

First brisket

Hi again Forum

Today we smoked an 8 pound brisket (point end)--left 1/4 inch fat cap
10:30 am put the meat on the smoker fat side up until it reached 170F
6:30 pm foiled it until it reached 185F
7:30 resting time, still in foil
8:45 dinnertime

We kept the grate temperature at 225F throughout ...

All of Alice's research paid off, two perfect chickens and just about to carve up a brisket.

Best christmas present - always wanted a hobby centered around a beer in the garden.
