I haven't smoked beef but I've done a lot of boneless pork shoulders from lidl. The ones I get are usually around 3-4lb in weight. I take the skin off and refit the string/elastic and smoke them. They come out pretty tasty, I prefer sliced to pulled so usually go to 88-90 internal temp.

Hi Steven, here's how I post pictures; I use imgur.com as a (free) file host. It can resize them for you.
Then use the 'Img' button above the reply box and paste the image url between them. I usually right click on the picture I want to show and select 'copy image location'.

How often do you do a smoke?
I have probably cooked on my kettle every 2 weeks on average since I got it last August - I'd smoke more but the time it takes means I generally just do it at weekends. I like to keep going over the winter as well. What about the rest of you?

I just got 56kg of briquettes from Lidl for £16 - they're doing 2 x 7kg bags for £4. I've used it a few times before and it works ok; I know how much heat I get from a chimney.

My girlfriend and I are heading down to Manchester for this - I'm looking forward to trying some ribs by someone who knows what they're doing (she probably is too...) and hope to meet a few of you as well. We'll only be there for the Saturday but I'm really looking forward to it.
