Guess you need to decide how you want it, rare, medium, etc then just gonto that temp?

Sorry, yeah, I should have mentioned I want it rare to then let it rest for a bit. I was just seeing if anyone had a rough time estimate. I was cooking for my family and I knew the ribs would take about 5 - 6 ...

I really wish that I'd had the guts to smoke the two rib beef forerib that I also cooked on the MasterTouch. I just had no idea about timings etc. Has anyone smoked a beef forerib before? It was about 3kg worth of beef. What should I be looking at for times?

Well I did the ribs, they were spare ribs as he had run out of baby backs, but they were amazing. I used a rub from my Jeff Phillips Smoking Meat book, but I forgot to coat the ribs in American mustard first. I sprayed them with apple juice whilst they were smoking and it kept them from drying out ...

Thanks for the posts folks. I might see whether my butcher has spare ribs as well. Then I'll cook the spares on the bottom rack using the 3-2-1 method and the baby backs on the top rack for maybe 1-1-1 and see how that goes :)

Thanks for the advice Scantily :) My butcher has a bunch of baby back ribs in at the moment so I'm gonna get some of those to try this weekend. I'll use your suggested 2-1-1 method. I've got Dr BBQ's Slow Fire and Jeff Phillips' Smoking Meat so I'll have a look for rub and baste recipes tonight!
