Hand of pork
Hi guys.
Has anyone used hand of pork for pulled pork? I normally use shoulder of pork with the bone in and passed a butcher in the market with hand of pork on offer.
Would you cook this exactly the same as a shoulder and prep the same way?

I was aiming for 190 and by the time I took it off it was 196 oF. I didn't really notice a stall but I did just put it on and left it. There wasn't really a lot of juice left after I left it for resting but I think next time I will leave the skin on and make a sauce for it to be pulled into.

I did have a drip tray underneath that was filled with hot water to try and keep it moist. As I said it wasn't Sahara Desert dry just I was expecting it to be a little bit more moist thats all. As it was my first attempt Im just happy that it turned out well!

Thanks for the replies. I only thought it was a little dry nothing to write home about but was pretty chuffed with the results. I only used the tesco pork incase i completely screwed the cook up and didn't want to waste a good cut! If u had more of a fat cap would that make more of a bark??

Well I ended up buying a 2 inch smoker thermometer to use in the vents and see how I get on with that. Was hoping to get some cooking done tonight but time and weather are against me!!

Cheers for the reply JEC. That page has loads of information on. I'll have a look at temperature probes but trying to explain to the missis why I need them might take a while! It was hard enough trying to get the bbq !
