Hand of pork

Hi guys.

Has anyone used hand of pork for pulled pork? I normally use shoulder of pork with the bone in and passed a butcher in the market with hand of pork on offer.

Would you cook this exactly the same as a shoulder and prep the same way?

I use a weber kettle and have managed to purchase some heat beads from The Range.

And does anyone know of any butchers in the Plymouth area that do pork butts?

Yes, I've used hands of pork for pulled pork, same prep and cooking as neck end shoulder/butt.

Can't help with the butcher though, sorry.

Was it not a bit lean? I thought that's why people went for the butt.
