Re: CLEANING OF THE Q
I never really clean my kettles or WSM. For the kettles, I just use the heat from each new bed of lit charcoal to zap any crust on the grate and then brush it off with a wire brush into the coals. If I'm doing a one sided indirect cook, then I'll need to turn the grate through 180 degrees to get to ...

Re: U GOT MEAT!!!!!
My local, and far and away the most amazing butcher shop I've ever had the pleasure of shopping at.
I tell my girlfriend that walking by there and looking into the window is like looking at meat pornography, looks amazing, wide selection of seasonal produce and fantastic service!
Love it!

Not particularly close, but not a million miles away is Moens at Clapham Common. One of the best butchers in the country - although not cheap. They'll do pretty much anything for you if you ask nicely.

Re: cheese that does not melt
try using flat skewers rather than rounded ones[ ie like tagliatelle rather than spaghetti] and you'll find your food stays on the skewer
I already have some flat kebab skewers, but I've still never had much luck with Halloumi staying on them - I think the cross sectional area is too big and they ...

Re: Mayhem in May Shopping Dilemma...
I am fully aware of Dark Star Brewery. occasionally partake in a glass of APA but to me Hophead tastes too flowery, kind of perfumed. I do use their espresso stout in my brisket injection sometimes. West coast pale ales are fine but Samuel Adams exelled with their Oktoberbier a year or two ago ...

Re: cheese that does not melt
I hate grilling Halloumi on skewers. It always seems to fall off and drop through the grates for me
On the other hand, sliced quite thickly, marinated overnight in olive oil, chipotle and habanero and then grilled directly on the grate it seems to work really well.

Re: Competition Fuel
Superb. I know it well.
I quite often buy sacks of malt and bags of hops from them.
why when they buy it in themselves? and none of it local?
Price basically. They sell me 25Kg sacks of ready crushed Muntons Pale Malt at a decent price - and their hops are always fresh and cheap. If I'm in the ...

Re: Competition Fuel
Here's a thought......I've got time to brew a special beer for the Rudgwick compo. I could knock something up and bring a couple of cases over for the competitors. How does that sound?
