lumpwood charcoal in WSM
New WSM 57cm purchased and really pleased with build quality and glad I went for the larger version.
Just a question about use of 'restaurant' lumpwood charcoal in it - user guide suggests only briquettes. Is there any reason for this? Will lumpwood really cause damage to the smoker?
Plan to fire it ...

I'm sure that this question has been asked before (and many times) but would appreciate feedback and comments with pros and cons.
In the market for a bullet new smoker (finally got the wife to agree!)and from what I've read so far, these 2 products seem to come out on top.

Insulated containers for resting meat
Hi,
Can anyone recommend a good container for allowing meat to rest, without losing temperature too quickly. Have seen mention of the Cambro food holders but these I guess are commercial quality and the prices reflect this.
Any suggestions or tips gratefully received. I have a bbq planned for this ...

The wife had persuaded me to be part of a shopping trip to Nottingham last Saturday (this is after the planned trip to the Norfolk coast was postponed due to bad weather forecast) - agreed as long as we could eat at Red's.

Wish I had found the site years ago!
Have already had a good look at the Goulden's site and will be in touch with Paul very soon - have relied on a local tree guy for supplies that go into a wood burning stove and occasionally pick out bits that I think will be ok for the smoker.
