Im with the guys using smaller amounts of wood, (no pun intended
) i find that its easy to over smoke meat, and you loose the flavour of the rub and the meat .

I went last year it was excellent. I really enjoyed it. There are plenty of stales to look at selling all the goodies. There was a largish stage with the main acts on, and then a smaller bar tent with a stage in. The beer was good, and it was interesting talking to the teams who was competing.

I have a pro q (not for sale) but i am going to build a UDS, just because it looks fun and i hear really good things about them, Might be a bit of pain sourcing a drum but i think it will be worth it.

Ideally i want one with two probes, one for the chamber of secrets one for the goods.
