At the moment I'm doing 12-7pm. Monday to Saturday.
Ah the joys of cooking. Having to have new oven and grill installed and electrical work done in the kitchen. Looks unlikely I'll be able to get any food on the menu till Monday now.

First day was pretty crazy. Lots of problems that only ever appear on a first day. One of the fryers packed up and the other now seems to be running about 40°lower than it should. Still don't have an oven or hob or grill

Umm yeah. I put the shoulders on the smoker and take them off 11 hours later. It burns wood pellets for those 11 hours. I don't foil or crutch them. Just leave them to it.

Its a tiny little pub, no more than 40 covers at a time and that suits me just fine. I'm not after making a fortune. If I can pay the bills and do what I love every day then to me that's like winning the lottery.
