Aldi £4 pork shoulder - test cook!

Alright, as part of the Xmas food junk shop, I spotted Aldi were doing these.

The one I picked weighed 1.5kg and was £3.81.

Comes with a fat cap that trims off nicely, should make some half decent cracklins.

My interest in these - Aldi will have no doubt brined ...

Maverick 733 is a brilliant unit - very well respected. I use one for everyday cooking not just BBQ.

For instant reads, the Thermapen is a very good unit.

Well you can ask for a 'whole brisket, flat not rolled' which the butcher should be quite pleased with as he basically won't have to do anything with it.

That's quite a lot of meat though! About £40 worth.

Depending on what taste you like, get them to cut it from either the point (more fatty) or ...

Hi!

For sourcing meats, get to know your butcher. If he/she's not helpful, find another butcher!

Although one of the things I love about BBQ is that you can take pretty much any cut of meat and BBQs make them magical :)

Made a chimney starter starter!!

So I made a cool way to get the coals started super quick - modded a £16 gas ring from Amazon so a Weber chimney fits into it, choked the gas and now the flames get round the coal way quicker than newspaper or firelighters!

Two huge bits of advice.....

Buy a proper digital thermometer (two probes - one for the meat, one for the egg temperature). Big Green Egg actually rebrand the Maverick 733/734 but you can buy it much cheaper if it's branded Redi-Chek.
