I will bear it all in mind when I do my 1st smoke and will remember to have fun while doing it. Knowing me it will probably end up in the oven but you never know once I have tried it I might enjoy spend hours out there!!

Any recommendations on the charcoal to use? And would wood chips be the things to use for flavour?

For charcoal there`s lumpwood or briquettes so long as you steer clear of instant lighting or easylite you`ll be good,
i`m sure you`ll find your own preference.

Hi
Your offset should be good for hot smoking,but they are rather hands on ,monitering the temps and the fire.
As for fuel i`d go for charcoal unless you have a large supply of free wood,of a suitable type and well seasoned.
So use charcoal and use wood in small amounts for flavour.

I have just bought a leg of lamb for the smoker tomorrow and it has just dawned on me I dont know what to rub on it.. should I cook it bone in?

I always cook mine bone in.then i stud the lamb with slivers of garlic and sprigs of rosemary,some black pepper and sea salt ...

Have to agree with Kieth157,most of the charcoal freely available is npt worth lighting.
Changed to Heat Beads several years ago and used nothing else since.Every bag is consistant in quality, more than can be said for petrol station etc offerings,just my opinion. :D
