Yeah the butcher knows me well and I get good prices already

Has anyone ever used or own or built a brick built smoker? Are they much different from free standing smokers?

To be honest it's cost, once I have learnt what do do I have no issue buying good quality from the butcher but whilst I'm practicing I will use cheaper cuts

Ok, I may give that a go with the whole shoulder, I get mine from the supermarket or macros. Sometimes I get it from the butcher but generally I prefer to get other meats from him.
