Does anyone know where to buy liquid smoke in the UK or is there a way of making this?

If you're using it to get smoke flavour into BBQ sauce, as an alternative you can smoke some onions and garlic then use them in your sauce, that will give you a smokey flavour. Also if you're making something spicy, using chipotle chilli or chipotle tabasco works. You can get chipotle chilli powder in UK supermarkets, Morrisons also do chipotle piece in vinegar in jars (much like the lazy chilli product) and Waitrose do chipotle tabasco (brown bottle).

Hi Tucker,

The Calor Gas centre in southampton sell it and have an online shop. The link is below. A little tip if you are going to use it, start with a tiny amount and build up, its very powerful stuff and can easily overpower the food.

Just remember guys ... if your bbqing is good, you shouldn't need to use liquid smoke ... if you're competing and I can taste the horrid flavour of the stuff then you will get marked down !!! :twisted:

Hi Jackie,

is this the case if it's used in the sauces? should i be cooking & smoking my sauces on the BBQ/Smoker?

There was half a bottle of the stuff in my first place winning sauce at rudgwick :twisted:

As long as it's balanced well in the flavour profile you're ok. An alternative to liquid smoke is smoking onions, garlic and chilli then using them in the sauce. But if you can't be arsed liquid smoke is fine as long as you use it sensibly.

In terms of judging, you can get marked down for liquid smoke even if you smoke your sauce instead of using it. As has happened to someone this year, if a sauce is overs smoked it will taste acrid, if you use too much liquid smoke, same effect.

I'd suggest, perfecting a sauce the way you like it, smoked or cooked on the hob, as long as you're happy with it then it's all good.

I use the smallest amount in my sauce as the stuff is so strong,

I have made around 12 ltr of BBQ sauce and have only used around a qtr of a bottle in total

If you think the sauce tastes good that the main thing
