Just picked up the meat and went with the butchers recommendations. Ended up with a 7kg piece if beef that is the end of the rib eye going into the chuck. Looks like a nice cut. Approx 20" long, 10" wide and 7 or 8" thick with plenty of marbling. Also got a 6kg pork loin. Can't wait to cook em. Just ordered a Thermapen so it should be here tomorrow. £95 worth of meat so hope I don't cock it up!
