It's a really good article, read it the day it was revised, I tend to forget that not everyone knows about Meathead and don't think to put links up for these little gems. Science and food what could be better

Thanks for posting that link. I had thought the idea of foiling was overstated; I never foil ribs and only foil butts after taking them out of the smoker at 190F internal and then holding for about 2-3 hours in an insulated cooler. Stuff I learn from the basic tips on the virtual weber site. So foiling during the smoking process seemed counterproductive to getting smoke favorite and bark. Reading the article, I think it's time I see for myself what foiling will do.
