Hello all
I took the plunge and bought a Kamado Joe, must say I'm well impressed. Anyway I'm looking to smoke a shoulder of pork overnight and was wondering, do you use a water pan on ceramic bbqs. If yes what happens when the water has evaporated ? Do you get a temperature spike?

Congrats' on your new purchase.
I've not used a ceramic before but i do know that you've got no need for water in ceramics, the moisture that comes out of the food will keep it moist. It's one of the key points of them.
With temp' spikes i'm not sure.

I looked at the Kamodos when I was in the US recently and they looked good. I have never used one and do not know anyone who has. I am looking forward to the feedback from yourself and other forum members.

Hi Martin, you dont use water in them, did it come with the heat deflector? if not I would advise that to be your first accessory, pretty essential for low and slow on the Kamados although as I am sure people will chip in you will be able to make something similar, just prefer to stick to manufacturer options when they are available.

I did get a heat deflector when I bought it
Doc, I was enquiring about whether I should put water in the drip pan for a long cook, I did ribs at the weekend & followed what you said on the saturday at grill stock i.e the 3 1 1 method but without any water in the drip pan. you probably won't remember but I quizzed you about ceramic barbies while you were cooking up some bacon on your ceramic before your demo. thanks for your advice and by the way the ribs were great, the missus was well impressed.
Wade, I'll keep you updated on how I get on, I'm no expert so I'm not sure what weight my opinion has, but I'm really pleased with the barbie, I cooked the ribs at 250, really easy to maintain the temp and it hardly uses any charcoal.
