Ok, the pitmaster bit is tongue in cheek. I've got no experience of BBQ or smoking. A recent trip to Texas and the Salt Lick at Driftwood have ignited my taste buds.

A pro Q is an imminent purchase. Low and slow ribs, turkey, brisket, chicken, pork and fish are on the menu. I have some good butchers near which I like to support. I hope to be a regular poster. I love my forums :-)

Welcome Mate I'am a newbie too its was all Adam Richman's fault (man v food) i got into
BBq slow and low , the pulled pork oh baby

You've got some wonderful suppliers locally you lucky chap. I've still some Welsh Black and llanwenog Brecon lamb in the freezer, but not much now :cry:

Welcome from a fellow Cardiffian - you'll have to let me in on which butchers are good around here. The ones I've tried look at me blankly when I mention pork butts!!
