This was my first effort to make potato bombs, I stuffed them with an 80/20 mix of minced veal and belly pork seasoned with parmesan.I made to much stuffing so I made balls out of them and grilled them at the end of the smoking when I crisped the bacon up.The poussin was in brine for 8 hrs.
The bombs were very tasty, anyone got any TnT stuffings to share.
