And I think it's time I popped that particular cherry :lol: been looking at various recipes. In terms of the sausage meat do I just use bog standard sausage meat or should I be looking at something different?

Use ordinary sausage meat if you like, but dont use inferior bacon if making a bacon weave.

If its just a meatloaf, make the meat great!

I tend to use a really good quality meat like korkers, but I add little bit more cracked black pepper and a finely chopped chilli.

The better products you put into it, the better end product.

Made one (two actually) today. Kept it simple: sausage meat, mushrooms, bacon and a bit of rub. The bacon weave was a little bit fiddly but looked good. Family enjoyed it. I guess when cooking for larger groups I can do these rather than having to grill sausages. All in all reasonably pleased and well worth repeating/experimenting with.

      I'd agree they don't need a lot but I'm thinking a bit of jalapeno may not go amiss occasionally.

      It may be wrong but I make mine with ground beef and or pork and add my own herbs/spices.
