Knives
Can anyone recommend some essential (and quality) knives that every BBQer should have in their competition kit? It's my Birthday coming up

Here is the last discussion on this topic. Basically you pays your money and takes your choice. The only thing I would add is once you've decided on a price and brand try and find a cookshop that stocks them to make sure they fit your hands.

Yes -really do try before you buy, I have a great set of Wusthoff, but couldnt get on with Global

As a fan of oriental style knives (15 degree blade as oppposed to 20 on european knives), the best value
I have come across are I.O.Shen. I have noticed more and more professional chef use them as well.
Their customer service is also superb, I chipped a knife in a house move and they reground it and shipped it back
to me in perfect condition for £7.50.
I would suggest a pairing knife, a large chef's knife and chopper would be a good start for BBQ knive selection.
Also learning how to sharpen a knife is essential - I cheated and bought an electric sharpener.
Quite like the idea of some large butcher style sabre knives next, to add to the 40 or so knives I have.........

I will look into the I O Shen knives i think. I was talking to someone at Grillstock who was saying they bought their knives from a chinese/korean supermarket and were just as good but a third of the price. So i'll look into that also.

I bought my Hattori Santoku from Japanesechefsknives - they were very helpful and I would recommend them.

If anyone is coming down to Brighton for a jolly this weekend I have a selection of the I.O.Shens that I am more than happy for people to try out. My favorite is their 6" chefs knife at the moment, i used it for all of my trimming in Vegas.

I love my knives which bought from Germany long time ago. Very best in terms of quality and durability.
