@aris.
I was going to have a water bowl, but having read on here about the clay pot idea I went and got one of them. It's a fit and forget job, no messing about with water.
A lot of the guy's report no difference in the moisture level of the end product, but as this is it's first go, I will have to get back to you on that one.

I assume the terracotta or water bowl is used to divert the direct heat?
