Cheesy Sweetcorn

Post by London Irish »

A favourite from one of my braai books...

Ingredients:

300 ml milk
30 ml butter
3 eggs seperated
1 x 410g can of sweetcorn or 250 ml of fresh kernels (I prefer the latter)
100 g (250 ml) grated cheddar (I add parmesan for extra flavour)
5 ml French mustard
250 ml fresh breadcrumbs
Salt and freshly ground black pepper

Method:

Heat the milk and butter in a potjie/Dutch oven
Beat the egg yolks and stir into the milk along with the remaining ingredients barring the egg whites
Whisk the egg whites and fold in
Cover and cook gently over low coals until set (roughly 30 minutes)

I sometimes add pre pan fried garlic mushrooms.

Enjoy :P

Well, that looks like a plan for when/if the boss & his lady eventually make it for a Qfest (holding thumbs and crossing fingers makes typping difficult ;) )

Sounds tasty, I would enhance the recipe slightly by either adding smoked bacon at the start or having it fondue styley with cubes of pork or beef that had been seared.....I know the veggie thing, but vegetarian food is like trying to paint a lanscape picture without using the colours blue or green, you can do it but its a bit muted.

Does sound like tasty cheesey goodness though, I note you do not add calories per serving! :)

Cheers

I like the cut of your jib, perhaps a kebab with alternating chunks of chorizo and black pudding dunked in the nourishing cheesy goodness could work..........
