Hi,
I'm wanting to take on my first Brisket and i was after some advise & some recipes.
I like to make everything from scratch, i'm just a bit funny like that. i get more satisfaction from cooking this way.
I was wondeing if anyone has any good brisket rub recipes they'd be willing to share?
Also anyone got a good injection marinade recipes.
One final thing, should i be mopping this as well?

I have tried a few of Ray Lampe's aka Dr BBQ and found some of these to be very good. Problem is I'm in Spain at the min and don't have access to them.. I think the mopping is an issues for comp style brisket, personally of I'm doing one for friends and family I sauce it a little whilst its on.
From what I understand saucing only the underside is done for competition brisket. If it were me I would brush on some of my favourite sauce with a rubber brush (Wilkos £1.99) awesome piece of kit again no good for comps LOL.
