Cooking a whole brisket today for tomorrow an although it has only been on for 3 hours now (with BBQ temp siting between 224-234F) it is already at 160F. I double checked the temp from the Maverick with a standard probe thermometer and everything is ready correctly.
I was expecting a 5KG brisket to take 18 hours but this is flying along.....will it sit here for hours????

It sounds like the probe isn't stuck in the centre of the meat, but personally I wouldn't worry too much as when i'm cooking brisket i won't start to probe for temp' till it's been cooking for 6-8hrs depending on the thickness of the flat.

Don't worry about that. It's called the plateau. It will sit around 160-170 for quite a few hours before rising again to it's eventual cooking temp.
