Will only butt do?

Post by Saucy Pig »

Just a quick question, but has anyone had any decent pulled pork results with anything other than the pork butt?

The reason I ask is sometimes its a real struggle to get the things. Local butchers have all but(t) refused to cut them and want crazy prices when they do. The local abattoir will do them, but the results vary wildly depending on who is cutting it. I've had ones turn up with ribs still attached  and its almost like its causing them trouble with tuts and sighs in reply to my requests.

So can I just rock up to Tesco get a rolled shoulder, maybe trim off the far, rub and get decent pulled pork so as you wouldn't notice?

Cheers

Hi Nick, the butt is an American term for a collar or neck end, it is so similar it isnt worth fretting over, I always ask for a neck end and it pulls perfectly. See what response you get asking for it.

I've regrettably tried a string tied 'Rolled shoulder' joint once ! never again, There's no comparison to a whole joint of either neck/collar or shoulder bone in joint.

I've had good and bad, more good then bad but get the biggest shoulder joint I can. Asda regularly do whole rolled shoulders which work well for me.

yep, i've used asda shoulders. The large joints are often one piece lumps of pork :-) google 'east london steak company' they sell online and do 'butts' and 'ribs' plus a wide range of other stuff, not cheap though..

Cheers for the replies all.
It was after a few visits that I realised what I was after were called collars. The place is busy though, so even if I go once a week and speak to exactly the same people, I still get the same "whats a collar?" conversation pretty much every time.

Been given a link to a quality butcher which I'll have a look at when I want something decent.

Dropped on a bit of luck tonight. It seems my local Bookers have extended their range a bit. While hunting for ribs I came across something described as frozen neck fillets. 13.6kg for £37.99. On closer inspection the boxes themselves were labelled frozen boneless pork collars. :D Individually wrapped mini pork butts. Plenty of fat running through them but no fat cap. About 2-2.5kg each it seems..proper made my night. Im guessing the same things mentioned in Toby's thread.

Got one defrosting for the weekend will post results.

Ouse those boneless collars to make sausage. They are great.
