Smoked Beef Ribs

Found a meat supermarket here in the north east, Bolam Foods. Basically you can buy anything meat related, its huge! Got these beef ribs, the largest weighed in at 1lb, cost me around £6 for 6, bargain. Smoked them for 10 hours at 200f in my fec120 with a simple rub, basically salt, pepper and onion granules, used hickory pellets.

now thats a MAN'S' dinner if ever i saw one.

i also see you're from the north east. Im irish myself but was over visiting your neck of the woods back in February. I was staying in Staithes, but ventured up to Peterlee/horden/hartlepool on my travels. Great place and people.

What did you cook them dinosaur ribs on by the way?

They were smoked on a FEC120, forgot to say they were foiled with guinness and worcestershire for the last hour or so. Staithes is a very nice fishing village.

Wow, gnarly ribs mate, proper caveman style. They look awesome.

Making my mouth water just looking at them

I dont cook enough beef ribs...need to fix this :mrgreen:

They really do look amazing. I'm inspired and have picked up some beef ribs from a local butcher and planning to smoke em over the weekend! (also a baby back rack for good measure) :D

Anyone have any tips for asking for beef ribs from your butcher? I asked and the lad went and brought something huge (about 2 foot long!) out of the fridge that had what looked like a couple ribs attached to the end. I mentioned that I just wanted the ribby bit itself, and he said 'oh, you mean a jacobs ladder, we can do you that with a bit more notice', but then having googled that, it appears to be a cut from the same area, but cut perpendicular… See image: http://en.wikipedia.org/wiki/File:Shortribsphoto.jpg
