I have no means of injection. :( Will have to look into getting a meat injector for the future. I'm making Pepper Stout Beef so I'm only smoking it for around 4 hrs at 225c then it's getting covered and put in the oven. It then gets pulled, covered again and put back in the oven. Hopefully this will render it tender!

My butcher mate isn't working as a butcher at the min as he's recently switched jobs. He is talking about returning to it again tough.

Next time you are up for meat buying, take him along if possible then there is no chance of being given the wrong item. Still as Ed says it's not wasted, either meatwise or experience wise.
