Tesco Ribs

Just picked up a couple of cheap racks of ribs from Tesco to experiment with. Anyone used them and recommend a good starting point please for timings and temperatures.

I understand that the timings in most American books are too long for our "skinny" ribs.

They will be cooked on a Pro-Q Excel.

Never been tat impressed with the ribs at my Tesco's but then this is the place that when I ask what part of the cow the 'stewing steak' came from I was told "The stewing part".............................

I have been trying to following peoples 2-2-1 method for most of the "skinny ribs" you find in the UK.

If you are going to glaze them, I'd drop the 2 hours to 1.5 each, if you don't glaze keep to the 4 hours. Bear in mind every rack cooks differently as they won't have the same exact amount of meat on them and there is little margin for error IMO.

Thanks for your comments. I'm going to glaze them so I think I will go wit the shorter times recommended. I don't normally use Tesco for meat, but there are a couple of posts on here that say they get OK results with the ribs, and getting ribs from my local Butchers has proven problematic with some very suspect butchery skills.

If anyone can recommend a mail order butcher (Devon Rose seems to get good press on here) for ribs, that would be good.

Lots of good suppliers down that way, Devon Rose has been mentioned by several contributors in the past.
