Well it was certainly moist, but boy oh boy did I over season!

Followed the big beef rub recipe from amazingribs, but think I put twice as much on as I should have - black pepper was al, that could be tasted & some fiery malabar too. Recipe said it would mellow with the cook, did it buggery!

Having now scraped most of it off, and its now much more enjoyable. Much prefer it hot vs leftovers, and don't think it's as good as PP the following day, so will be looking for recipes to use it in.

Wife ranks it below ribs, pp and hot smoked salmon, so guessing I won't be cooking much brisket.

If its any consolation my family much prefer pp, ribs and hot smoked salmon to brisket

Don't be so quick to write off brisket, it was your first go at cooking one and it is the most difficult meats to master.

Personally I think a good piece of well cooked brisket is is one of the finest things to eat, and then you've got burnt ends.

I loved it hot Ed, really moist & tender, leftovers just weren't up to much IMHO, this morning when vac sealing it all, the cheeky chef nibble of pork was more more for me than the beef.

Given it being twice the price of pork shoulder, as leftovers go, it didn't excite. If it sets my (well Hestons)
Chilli over the edge then may well reconsider it.

I prefer my brisket hot, so with left overs i'll take a few slices with a few thin slices of cheese and micro wave it for 60 second and put it in a sandwich, i find the grease from the cheese melts into the meat to add moisture back and added flavour and it's as good if not better than fresh off the smoker.

Other than that add it to pizza, beans or chilli and it's always a winner.
