Few more things I thought of.
Don't fret too much about the temp, 10 or even 20 degrees here or there wont make a hill of beans
Don't worry about the offset thing, I have one and it does a creditable job, wont try competition brisket on it but it has turned out many tasty things.
One thing I did enjoy with the offset is when the meat is done put some raw chillis and garlic as close to the out vent as you can lob on more wood to the residual coals and leave them to smoke, store under olive oil or freeze and they add a zing to a dish at a later date
You need more time than you think allow extra pulled pork holds for hours much better to be early rather than late
If you are a few hours in with the smoke and it all becomes a pain in the buttocks whip it off foil it with apple juice and fling in the oven, you will still ge the benefit of the smoke flavour and will have calmed down enough to enjoy the scran......

Aup Tiny, nice one for the post!
I will bear it all in mind when I do my 1st smoke and will remember to have fun while doing it. Knowing me it will probably end up in the oven but you never know once I have tried it I might enjoy spend hours out there!!
Hoping to have the bits I need to get it modified by Monday and then get a few dry runs done before I attempt anything else.
The part I made bold what does that mean? Sorry sounding really thick there but wasn't sure so thought I'd better ask

Nothing wrong with the oven,after the first few hours the smoke has done its work,like Keith i don`1t get along with lumpwood either but its a personal thing.Can heartily recomend heat beads been using them for years in my opinion
they are unsurpassed for an offset, no doubt many will disagree but its all opinions.
When i started it was a nightmare getting the temps right but it comes right in the end, so much so thats its now easier than the excell i bought. seriuosly though there is no substitute for experience so long as its enjoyable,which is the whole point apart from the great taste.
