UDS Thermometer

So, I'm looking to do some more work on my UDS this weekend (get the drilling etc out of the way).

Trying to think about how to get a cooking grate thermometer installed (but which can be removed easily for removal of charcoal grate). Some kind of opening about 20-30mm below the cooking grate for the probe to push through.

What thermometers have people used in the past? Looking for something around 200-300mm (to get into the middle of the grate). Capable of reading up to 350F (I guess).

Any help/pointers would be wonderful!

PS I have a Maverick, but was hoping for a semi fixed solution too.

I use one of these:

Dont use the included thermo probe caus the cable is melt-able. I use one of these:

Plugged into the meter, then i just wind the wire round the grate and rest it so its not touching anything, that works well.

For measuring food temp I use the same meter with one of these:

The cable on that one is heat proof so you can stab it into the food, lead the wire outside and monitor the temp constantly as you cook. Its very handy.

I'm a little worried about the stem length of the bbq thermometers.

Maybe I shouldn't be!

So long as the height's right I wouldn't worry too much, height is much more likely to result in temp variation than horizontal positioning, so you should be able to get away with a small and unobtrusive stem

Long stem therms make it harder to get the bottom grate out, too much juggling!
And chances of dropping meat.
