Pork looks great. Fantastic commitment to the cause. Longest cook I have had was 22 hours.

So, after a 36 hour cook time how long did you manage to wrap and rest it for? :D

Also, I have has good success with taking it to 203 IT, but really you hit the nail on the head with going for the 'feel'.

Love the blue kettle, love the WSM, and love the PP.

Also, get used to a few 'so what time will this one be ready' style questions that may or may not have a hint of sarcasm. :D

Hi Ken, Took it off at about 8a.m and managed to wrap & resist till midday then had one almighty lunch while everyone was at work and school!....completely indulged myself and savoured every moment :lol:

Think I'd still be waiting for 203!!!!

The "what time will it be ready" Q's came thick and fast already :lol:
