UDS just coming to temp , with some help from the IQ!
13.5kg of butts on and just sat back with a bucket of Tea.
Cooking Hot and Fast 325f for todays Help for Heroes fundraiser at the Queens Head , Nailsea.

Pork up to 130f internal already, smoking with Apple chunks, turned the IQ down to 300.
Will foil at 165 internal with some Tipple and my homemade sauce, then take them too 210f and bung them in the cambro to hold untill serving time.
We are well lucky as the pub has a fully equiped kitchen which we have sole use of today, so I can use their ovens if needed.

205f ish if I am cooking Low and Slow, 210 if I am cooking Hot and Fast, depends on how they feel when I probe them.
There done when they are done.
No hard and fast rules. It's what works for me, I don't compete just yet, so as long as the food tastes good that's enough for me

Sounds about right, you can't always follow a strict recipe, and the fall back of an oven available, sweet. Good luck Si, although you don't need it, and hope the very worthy cause gets much wonga too.

Disapointing turnout today, but still more money for a fantastic cause.
