Hey All,
I have almost all the parts for my mini WSM (just waiting on the pot from the USA). I am using a SMokey Joe Premium which seems to be a gold renamed for the UK. Should I build a charcoal basket or not bother?
Anyway I want to do some pulled pork in it as one of the first cooks - I will do some chicken and pork belly to season and get used to temp etc.
So tips on where to get pork shoulder? What size should I look to get etc?

From pictures of similar conversions I'd stick with supermarket shoulder joints until you get the hang of it and worked out temps & times. Unroll them and remove the skin and Robert becomes a close relative.

I notice Sainsburys has rolled boneless shoulders on special - 3.99/kilo. Do you cook them unrolled, or do you remove the skin and roll them back up?
I find they have a fair few flappy bits when you unroll them - and it makes the whole shoulder quite thin.

Asda often does bone-in shoulder joints, as does Morrisons. Of course, you need to make sure they are not too big for your Mini-WSM!
