I have become a brining freak and basically brine anything that moves! Works great with pork butt.

On the little teasers you get on youtube I saw the bacon onion rings............they are on my to do list now :)

OMG bacon onion rings! They'll go perfect with the bean can chicken. Can't wait for tomorrow :)

Or you could cut out the veggies and go for moink balls 8-)

You could but they are onion rings with bacon, AND then deep fried, they would go down well with anything short of dessert!!!!

So I did two chickens this weekend, on brined, one unbrined. I brined one overnight about 10hrs, it was not as firm as the unbrined one when compared just before cooking.

Everything else was the same, so i could compare, and the result.....not much difference really, if anything at all!!

My OH wondered whether I should have pricked the chicken to aid the soaking of the brine.

The only other strange thing I noticed was that neither chicken seemed to produce much in the way of juices, previous ones produced enough for gravy these didn't?

Interesting comparison. I usually expect gravy juices to be produced during a beer can chicken cook.

I can imagine a chicken (or anything else for that matter) which has been brined being more firm. It has caused some of the water naturally occurring in the food to be displaced. Pricking the chicken would allow the brine to penetrate the meat more readily I would think and cooking juices to come out more readily too. A duck breast can be better for being pricked, to let some of the excess fat out. Having said that, it needs to be particularly fatter for me to want to do that!
