Butchery is regional in the UK, my boss was from the East End of London and he broke his carcasses down differently to both the butcher opposite our house and the Dewhurst butchers who all cut to a standard pattern.

Took another trip to my local butcher yesterday - pork belly is £3.60ish/Kg and oxtail £6.47/Kg. I think the oxtail's the only thing I'd consider a little overpriced, but it still beats Sainsbury's £8/Kg. Still walked out with 1.25Kg of BIG chunks, they'll be hitting the smoke later

Here's what my Scottish beef short ribs (Says Jacobs Ladder on label) from Campbells Meat looked like raw, rubbed and cooked. Really nice beef and tasted amazing :)

That's a nice big chunk of meat on there. Where did you get them and how much did you pay per kilo?

http://www.campbellsmeat.com I paid £6.95 per kilo when it was on special offer, but it is normally £7.95 per kilo.

Worth it for 7.95 - they have left a nice bit of meat on there. Most of the ribs i've seen look very bare - i'm certain they trim alot of that meat off before sale.

Again aris we're a niche market, the trim always used to go into the mince/stewing steak
