What smokers do BBQ restaurants use?
I'm just curious to know what kind of equipment is used. I suspect most places use cabinet type smokers imported from the States? Is there a favourite brand?

Just my 2 pence,
Jospers are used quite a lot in the restaurants I supply, but we are seeing a move towards proper smoking with some now having Big Green Eggs (or a similar product) which I think is brilliant.
