Where to get low'n'slow 101?
Re: Where to get low'n'slow 101?
Yeah, I do indeed. Proportions are very rough, but you can adjust to taste...
Paprika (sweet) is the base. Tons of this.
Onion powder
Garlic powder
Cumin powder
Salt
Black pepper
Soft brown sugar
Cayenne pepper
Chile powder (I tend to use mild, for the flavour, as the cayenne adds heat and the wife isn't so keen)
Think that's everything i put in... I get most of my spices from Makro, though they don't sell onion powder in bulk so I buy that online. I tend to make it en masse and store for barbecues. This rub works well on ribs and pork shoulder. If using on chicken I up the garlic and add some tomato powder. If using on beef I up the spice, salt and black pepper (though often beef will just get the s&p treatment)

Cheers Rob
I picked up most of that list, think I should have some paprika around too. I was thinking I need to look into where to buy in bulk as Tesco is expensive in the quantities they sell.
I bought a pork shoulder, though it was a bit more than you'd suggested, I'm guessing as it wasn't their value one, it was £6/Kg (£2.7/lb) so it is 1.6Kg and cost £10. I'd popped in a local butcher who does it a bit cheaper at £5.5Kg but he was out of shoulder today. I'll need to start being on the lookout for a good butcher I think, it's just always made more difficult in that they only open 9-5 during the week often when I'm working which is why I end up shopping at Tesco.
I've managed to get the smoker built and it is currently warming up outside. Last check it was at 70C after about half an hour and its on 1/2 power. I'm trying to get a few pics I took online so I can stick them in a thread in case others are interested. I'll try and sort another thread and post some running updates in there.

Re: Where to get low'n'slow 101?
Hi Eric
Congrats on the build, looks lovely.
WRT buying spices in bulk, it is well worth it. I have a Makro card, and pay about (from memory, could be wrong) £1.70 per lb. I am happy to get some in for you on my card if you don't have one. The missus works nearby and it isn't far from home.
However, if you are lucky as we are in Sheffield to have a large Indian and Pakistani population, it is fairly easy to buy quite large packets of spice at the local Asian shops.
Makes me sad to think of people paying £2.70 a lb for pork shoulder. Come to Firth Park, I'll introduce you to my butcher! Local butchers should not be asking for more than £1.50 a lb, especially if you are buying a large cut. You should be able to find it at similar prices - Chesterfield market?
My butcher has seemingly infinite fresh shoulders ready to go, no need to order, and are cut to spec. I have them whole, with just the hock, trotter, spare rib and skin removed (sometimes I take the skin for crackle, other times I leave it
). I am so lucky having him a 2 minute drive / 10 minute walk away. If he was across town I would still buy from him, and make excuses to do the crosstown drive twice a week.
Murray & Webster, Bellhouse Road, Sheffield S5 for any Sheffielders interested!

PS a lot of butchers round here open at 7 or 8 am to catch working trade. Ours open at 8, the evil thumb on scales butcher nearby at 7.

As to bulk buying herbs & spices this company seems to be okay

Quite expensive, around 3 times more than our local Asian shop and 4 times more than Makro.
The two items I have had trouble sourcing cheaply in the meatspace are onion and tomato powders, which I have had to buy online.

Sounds like I need a trip out to your end of town Rob
or I might take you up on your offer, if your headed there at some point and didn't mind picking up some supplies. I reckon we'll meet up before that though, so can have a natter in the pub.
Re: Where to get low'n'slow 101?
Yeah it's no problem to nip to the shops for you. If you want me to pick anything up in advance of us meeting too, just holler. From memory I paid under £2, perhaps £1.70 for a 400g pack each of cumin, paprika, garlic etc. at Makro
Sheffield has a wonderful wealth of pan-Asian shops, it's great. I love the huge Chinese supermarket that looks like a mafia compound. Just wish there was more in the way of west European food!
