Coffee Rub for Chicken

It's been a while since I have posted on here so thought I'd get back into it by sharing the below, I have seen coffee rubs listed in various places and tried a number, the below was posted by Carolina Q on Green Eggers forum he used less salt due to low sodium diet I like a but more, also upped the Chilli powder slightly.

(Enough for 2-3 chickens)

2Tbs Instant Coffee (I use a good Kenco one)
2TBS light brown sugar
1 TBS Sea Salt (I use Kosher salt)
2 TBS Garlic Powder
5 Tsp Chilli Powder (I uses Ancho Chilli powder as its mild and a bit fruity)
1 TBS Black pepper.

Grind the coffee and salt down into a finer form and mix with remaining ingredients.

Apply some to the cavity of your chicken and then liberally apply over your whole chicken, cook in your chosen method I did mine vertically.

Turned out really well and went down really well with the family, I hadn’t used Ancho Chilli before and added a good dimension to the rub.

I found it an acquired taste, I had a tub of Steve Raichlin's but couldn't get on with it, although friends liked it. Ancho is about my level for heat :oops:

Was it not quite bitter? Given the ratios did the coffee actually add anything?

Connor, it added a distinct and very different flavour, worth having a go, but not one I'll be going back to.

No it wasn't bitter at all, the coffee does add something, It's hard to describe the actual flavour, its doesnt taste of coffee and none of the family said they could taste coffee but does add depth.

I believe the coffee tends to bring out the flavours of the other spices, much like salt and sugar would.

A bit like adding a small amount of 100% cacao to a stew or tomato based sauce. You don't taste it, but it does add some depth.

Chaps,
It is 1st may not 1st April, you are not going to persuade me to slap the old nescafe on my chicken (does that sound rude?) I am all for pushing the boundaries but this one appeals as much as the carbonated feta cheese and kidney milkshake.....

As bertie basset says, it takes all sorts.......

Well I do add cocoa to beef rubs so might give it a go.

You might find that using proper coffee, ie ground beans not that awful instant stuff would improve the taste further. Sorry, I'm a bit of a coffee snob and anything that gets spooned out of a jar is as much 'coffee' as Supermarket oven ready ribs are BBQ! :lol:

Interesting that you've tried it though, I did wonder if coffee as a rub ingredient would work. Will try a little next time I make a rub. :)
