Turkey time.
Going to have a little pre xmas Turkey practice of my own. So how long should a Turkey take at 230 degrees F? I read somewhere approx 30 mins per pound ....does that sound about right?

The guide that i'm going to be using this year also said half an hour per lb at 230f.

Scott, why don't you cook your bird at a higher temperature. I have cooked at least a couple of hundred birds and do so at a temp of at least 275F. But you could go as high as 300F. Turkey is not in need of low and slow as it is already a tender piece of meat. One of the first turkey cooks I did on my big commercial pit (one like it) with Danny G of Carlsbad, NM, we did 32 turkeys. They ranged in size from 12 lbs to 26 lbs. They were all cooked at 250-260F and believe it or not the last bird to be done was the 12 lb bird. Using the time of 30 min. per lb is a guide line, but as you know, the internal temp is the most important.

I always go for a higher temperature faster cook ... retains more moisture in the bird !

Got to love this. I was thinking oh no one will have asked this question yet its not close enough to Christmas and bang here is the answer
