Whole brisket
Whole brisket
Spoke to my local butcher about getting a 'whole' brisket. He said a whole brisket as he gets it can be 20 to 30 kg in size! This includes bone and a load of fat. Does this soud right? He was a hall butcher,and english not his first language, so hopefully nothing was lost in translation.

Getting it deboned would save you a lot of hassle and weight, and considering a large whole packer brisket in the us would be around 18lbs, 20-30kg doesn't quite add up. Are you definitely sure it's just the brisket he was talking about, as 20kg is huge let alone 30kg! Especially considering US meat cuts tend to be a fair bit larger than over here.

I just explained the flat and the point to my butcher and asked for him to get "that bit" as big as he could. Tends to work well enough
