Hi from Essex! Smoking my 1st whole brisket tonight.
Hi all, my names Alan, and i'm in East Tilbury Essex. Been lurking around here for a while, gleaning info from these pages, which have been really helpful and informative. Started out with a mass produced offset smoker, coz it looked the part, but it was a nightmare to use, so I built myself a uds. Smoked a few racks of ribs and chickens, and a small bit of brisket, which I turned into some lovely burnt ends! No probs holding temp between 225/250. Cooking a whole brisket tonight, can't get the uds above 214 with all vents wide open! Any suggestions?

Which offset did you have mate? I was considering the Landman Grand Tennessee but after some research found people had serious complaints about its suitability as a smoker.
Would love to be able to make my own UDS. Did you need to do any welding? Have you painted it?

Hi and welcome. Did the temperature go higher on the UDS when you smoked the ribs/chickens? Your temperature should be defined by the airflow if you've got sufficient fuel burning. If you've got a water pan or another heatsink in there you perhaps it might just take a while to get up to temperature?
