Waitrose BBQ range

Post by JBBQ »

I watched the idiot Wallace on a program about supermarkets last night
http://www.bbc.co.uk/iplayer/episode/b0 ... et-secrets

For anyone who has tried the pulled pork waitrose often have on 3 for £10 it showed a) what didn't make it into the range and b) the methos they use - 1 hr smoking with oak, 10hrs slow steam cooked.

The BBQ buyer/product dev seemed pretty pleased that with all the ham they make "other parts of cheap meat" can also be used for this one

It's pretty good - a friend swears by it but I don't see any need to smoke it any further. That and I find the rub a little bland and it doesn't really make bark like I am used to.

Oh ok. Might give ot a bash then. Is it properly smoked then? A lot of bulk manufacturing uses sprayed on liquid smoke.

They showed a bloomin big bed of glowing/burning stuff, and at some point the "artificial liquid smoke taste" was noted by its absence

Thanks for posing the link as I found the whole programme very interesting to watch, not just the BBQ bits. I'll be looking out for the rest of the series.

Finally got to watch the vid and it was very interesting. Seems the pulled pork was properly smoked with oak. Thanks for the link, really good.
