Wing Wip meat

Went to Wing Yip which is near Wembley - but they have branches all over (google them). Butchery department was quite interesting - fresh UK whole briskets, though small, looked like they contained flat and some point - 5.10 per kilo. Also fresh pork collars - around 3 pounds a kilo if I remember correctly - many of them in a 13kg box though :)

Nice find, there's one near me that I've shopped at a fair bit, but never for meat. I'll take a look next time I'm in! :D

Yes, that's them. Basically a Tesco of Oriental food :-) They had a nice fishmonger, butchery, etc. They sold all the 'odd' bits of meat which they like in the orient, which seemed to cross over into what is used for BBQ too :-) They have quite a variety of stuff - and if you have the time to mooch around, could probably find some interesting ingredients for rubs etc. I bought some palm sugar just to give it a go.

Never seen so many different kinds of soy sauce!

H-Mart is located close to me and they have Irish and UK brisket for abotu £5.4/kg. The one area that I get great value is that they do beef Jacobs ladder ribs. Normally they freeze them then slice it thinly, but the quality is excellent. They do pork belly's as well so I can normal knick an untrimmed one and get the belly and ribs out of it.

Bought one of these briskets today. £4.80/kg and just over 3kg - not much fat to speak of and looks like all flat - pretty uniform thickness throughout.

It is in the freezer, but I will report back when I cook it.

I've been communicating with Wing Yip about getting Jacobs Ladder short ribs in. They have agreed to experiment with them in the Cricklewood (West London) branch and are getting 15kg of them in on Friday. They will cost "just under £4.00 per kg" - which is an excellent price. They will be fresh, and vac packed.

If you're near there - might be worth going in and buying some - if they sell out quickly, it may well mean they stock them permanently.

Anyone know of good pork shoulder/brisket/ribs/Jacobs ladder at decent prices in South Wales?
