Leftover Brisket Chili

Post by BraaiMeesterWannabe »

I have about 550g of Brisket left since cooking a 3kg HOF on the weekend. While it was beautiful at the time, it is now rather dry, which on reading up is quite common. Anyway, I intend to make a Chili with it tomorrow night so if anyone is interested I'll let you know how it goes....and if it's a success will share the recipe used.

We do a brisket JUST for Chilli (and maybe a few nibbles after the cook! 8-) ) - MAZIN flavour, and takes ya chilli to a whole new level! ;)

There are sooo many recipes out there so I am taking some inspiration from them and then making it my own! Here's hoping it's edible

If it is, I'll certainly share it.

Well I did it….made up my own recipe and cooked the chili and it is scrummy :P
Image

Recipe is as follows:
Ingredients
2 TBSP olive oil
1 onion, diced
2 cloves garlic, minced
1 red peppers, diced
1 red chili seeded and finely chopped
1 tablespoon sea salt
1 tsp chili powder (mild or hot depending on taste)
1/2 tsp chipotle chili powder (add more if you want it fiery)
1 TBSP smoked paprika (mild or hot depending on taste)
1 tsp ground coriander
1 tsp ground cumin
½ tsb black ground pepper
1 pound smoked beef brisket, diced
3 400ml cans chopped tomatoes
1 400g can red kidney beans, drained
125ml red wine
200ml water
1 tsp Worchester sauce

Method
Saute onions, garlic, and pepper and fresh chili until tender in olive oil with salt in a Large cooking pot over medium-high heat.

While this is saute’ing mix spices together and add to pot, cooking for 1 more minute. Add meat, tomatoes, kidney beans, wine and Worchester Sauce. Bring to simmer and then maintain simmer for at least 2 hours.

Serving
Serve on it’s own with sour cream, on the side and grated cheese if you wish. Can also be served with rice, bread or tortilla chips.
