Smoked some Beef Ribs over the weekend on the WSM.
Smoket was at 250f over Pear wood until internal temp hit 195f took around 6 hours.
Used basic salt & pepper rub, taste was great but they needed longer on the smoker maybe take them to 200f next time.

Thanks mate, only rested them for 10 mins as I could not wait any longer

Lol dont blame you! I usually take them to that temp but then go back cocktail stick test

It's the first time using this cut of meat and it's well up there in my top 3
