Doing a great big 8lb hunk of shoulder today :D I'm a shoulder Virgin so new territory for me.

Lit coals at 5am and putting on at 6am (hoping to eat 8pm).

Using lumpwood for the first time today so interested to see how that goes. Got some great lumpwood made from oak from Dorset Charcoal Company who are just a few miles from me.

I tell you what, cooking with lumpwood is going to take some getting used to...the temp has been up and down like a brides nighty!

Did it stay nice and moist? I assume a big hunk o'meat like that would cook up well.

Yeah, lovely and moist and leftovers were beaut as well. Wife isn't a huge pork fan but she loved it too
